So everything we believe about fat is wrong?
Pretty much. The science simply does not support the public health message we have been fed for the last 40 years. Animal fat doesn’t clog the arteries and give us heart disease, but oil squeezed from seeds (most of the stuff called ‘vegetable oil’) does. Worse than that it sets us up for cancer and probably lies behind diseases as diverse as macular degeneration, rheumatoid arthritis and the five-fold increase in childhood allergies in the last 15 years.
Where have we gone so wrong with our consumption of fat?
We haven’t done anything wrong but buy what we sold. Unfortunately what we are sold has now had all the healthy animal fats (which consumed for the entire history of the human race to this point) replaced with cheap seed oils. We have almost no choice about the fats we eat unless we are prepared to assemble our own food from the raw ingredients.
For breakfast you recommend eggs with sausage or bacon and hollandaise sauce, but say no to tomato sauce…what?! Take us through this…
Eggs are an almost perfect food. They have exactly the right proportions of fats, vitamins and minerals. The meat will be very low in polyunsaturated fat (if it is not lot-fed) and the hollandaise sauce (basically eggs and butter) is full of all the good animal fats that previous generations thrived on. The tomato sauce is out because it will be high in added sugar (unless you made it yourself).
What are your top 5 tips for avoiding the bad oils?
1. Eat whole foods 2. If the food is processed then look carefully at the ingredient list 3. If that list contains ‘vegetable oil’ put it back 4. If you really must have it then choose the one with the lowest amount of polyunsaturated fat in the nutrition information panel 5. Discover the joy of making some things from scratch (like bread)
What is the best oil to cook with?
It depends what you are trying to do. Butter, Ghee, Coconut oil and Olive oil are good for pan frying and solid animal fats (like Lard) are great for oven roasting or deep drying.
What about salads?
The best thing to add to a salad is air. But if you want an oil, olive oil or macadamia nut oil are good choices.
What‘s the best way to eat out without blowing the waist line?
Know what the ingredients are in what you are eating and avoid foods with added sugar or that are cooked in seed oils.

Dinner: Roast Beef with Jacket potatoes, corn on the cob and broccoli
