This would have to be the best gluten free cookbook I own and I have lots. The receipes take gluten free cooking to another level. The flour mix and making procedures are quite straightforward and the ingredients are not hard to obtain (unlike those listed in American cookbooks). Everything I have cooked so far has been light, tasty & down right delicious. People do not realise GF food could taste so good. They also last well. Please do yourself a favour and buy this cookbook. Thanks to the wonderful French chefs for sharing their delightful receipes.
