Natalie Paull

Natalie Paull has been baking and loving all things sweet for more than 25 years. She started cooking in professional kitchens at the age of 18 and spent her formative years working with Australian food luminaries Maggie Beer and Stephanie Alexander. Nat opened the blink-and-you'll-miss-it cult cafe and bakery Beatrix Bakes in inner-city Melbourne in 2011 to widespread acclaim. Before closing its doors in August 2022, Beatrix fans lined up in the rain in their hundreds to secure a taste of the day's ever-colourful – and delicious – offerings of perfect cakes, buns, tarts, biscuits and more.

I’m a beginner baker and I love this book! I love how there’s multiple options for each recipe, even for when you stuff something up. I read it quite regularly just thinking of what I’ll make next!

For the experienced baker this book is the ultimate bible full of delicious sweet recipes. It has wonderful explanations and beautiful photographs. I have tried lamingtons, peach Alabama and poached stone fruit which have all worked perfectly and been delicious!

This book is glorious. Natalie's heart beats honestly and passionately on every page and I have already done as she advised and smeared chocolate on the pages. Her ethos is spot on with mine: baking for pleasure and also to make people happy. It's an absolute treat to have this in my kitchen and I can't wait to bake all of the rest of the recipes.
